Lamb Steaks With Anchovies And Lime

Lime and anchovies is one of the best ways to enhance the flavor of lamb steaks. However, there are a number of other ingredients that you can experiment with, including potatoes, rosemary, beans, broccoli and tomatoes.

First Lamb Recipe

The first recipe consists of fresh baby potatoes (750g), two teaspoons of olive oil, four lamb legs which have been rubbed down with salt and oil, mixed vegetables (green only at 250g) and between four and eight anchovies which have been chopped roughly. You will also want to add two limes.

Second Lamb Recipe

The second recipe involves heavier usage of tomatoes and sauce, which is combined with the lamb, lime and anchovies. It takes about twenty five minutes to prepare the first and second recipe while the cook time varies, with the second recipe taking only ten minutes.

For this recipe, those who want their steak rare will need to cook on each both sides for 2.5 minutes. For medium, you will have to cook both sides for four minutes and for steaks which are well done you’ll need six minutes. This recipe differs slightly from the first in that you will use black pepper that is freshly milled, along with rapeseed oil (olive oil can be used as an alternative). Other ingredients include two onions which should be chopped finely, a single garlic clove that is chopped and peeled, and a can of anchovies which are drained and chopped with four tablespoons of water.

Cooking Instructions And Tips

Take the steaks and put them on a big, non-metallic dish that is shallow. Add the lime juice and seasoning. Coat both sides of the meat and then cover and allow sitting for about ten minutes. While the steak is sitting, heat up the oil in a frying pan with a nonstick surface and begin cooking your onion, garlic, anchovies and potatoes for two minutes. Then add water and allow simmering for three minutes until the sauce becomes nice and thick. Take it off the heat and set it aside.

To produce the salsa, mix all these ingredients into a bowl and then season them. Once the ten minutes pass, begin cooking the steaks on a grille that is preheated. Flip and cook the meat on both sides for a minimum of 2.5 minutes for rare, 4 minutes for medium and six minutes for well done. Then serve with the salsa and sauce you mixed earlier.

The oven should be preheated to 160 degrees Celsius (300 degrees Fahrenheit). Those who are using pepper will want to season the shanks of the lamb. They work great with a casserole, especially when a bit of olive oil is added. Once the meat starts to brown a bit, throw in the garlic and chopped onions. You can also add the anchovy and bay leaves if you have them. Some cooks like to add red wine to enhance the flavor further.
